Pollo Mariachi
- 6 chicken breasts
- 1/2 large green pepper or whole small
- 1/2 large red pepper or whole small
- 1 medium sweet onion
- 1 envelope Taco seasoning
- 1 can enchalada sauce or taco sauce
- 3/4 cup salsa
- 1 cup diced tomatoes (optional)
- 1 stick crumbled chorizo (soft)
- 1/3 cup cilantro
- 1 fiesta blend cheese (optional)
- It's just this simple.
- Clean & trim chicken & place in a large casserole dish.
- Season with the taco seasoning.
- Julien peppers and onions & spread over chicken.
- Chop cilantro & throw that in.
- Crumble up the chorizo & spread evenly throughout the dish.
- Pour in the enchalada/taco sauce & salsa to cover the chicken.
- If you want it more chunky, add the diced tomatoes.
- Salt & pepper to taste.
- Cook uncovered for about 45 minutes @ 400.
- CHEESE PLEASE!!!
- If cheese is what you crave, add a fine shred cheese.
- I like a Mexican blend or fiesta blend of cheese, but feel free to use whatever cheese you want.
- Just plate the food & melt the cheese in either the oven or microwave.
