Pollo Mariachi

  1. It's just this simple.
  2. Clean & trim chicken & place in a large casserole dish.
  3. Season with the taco seasoning.
  4. Julien peppers and onions & spread over chicken.
  5. Chop cilantro & throw that in.
  6. Crumble up the chorizo & spread evenly throughout the dish.
  7. Pour in the enchalada/taco sauce & salsa to cover the chicken.
  8. If you want it more chunky, add the diced tomatoes.
  9. Salt & pepper to taste.
  10. Cook uncovered for about 45 minutes @ 400.
  11. CHEESE PLEASE!!!
  12. If cheese is what you crave, add a fine shred cheese.
  13. I like a Mexican blend or fiesta blend of cheese, but feel free to use whatever cheese you want.
  14. Just plate the food & melt the cheese in either the oven or microwave.
  15. ENJOY!
