Fiery Polynesian Chicken

  1. Add all ingredients to a gallon-sized Ziplock bag.
  2. Mix well and let marinate in the refrigerator for no more than 90 minutes.
  3. The pineapple will break down the chicken and any longer than that will give you an undesirable texture.
  4. In a large saute pan over high heat, add marinated ingredients and stir fry for 10 minutes or until chicken is cooked through.
  5. Serve over rice and, if you desire, top with yum-yum sauce.
