Fiery Polynesian Chicken
- 1 1/4 lb Boneless/Skinless Chicken Breast (thinly sliced)
- 1 cup Fresh Pineapple (medium chopped)
- 2 Jalapeno Peppers (minced)
- 1/4 cup Soy Sauce
- 1 tbsp Grapeseed Oil
- 1/4 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- Add all ingredients to a gallon-sized Ziplock bag.
- Mix well and let marinate in the refrigerator for no more than 90 minutes.
- The pineapple will break down the chicken and any longer than that will give you an undesirable texture.
- In a large saute pan over high heat, add marinated ingredients and stir fry for 10 minutes or until chicken is cooked through.
- Serve over rice and, if you desire, top with yum-yum sauce.
