Wendy's Vienna Jam Filled Cookies Recipe

  1. In medium bowl, combine flour and baking pwdr; set aside.
  2. In large bowl, cream butter and sugar till light and fluffy.
  3. Beat in grnd almonds and lemon juice.
  4. Gradually stir in flour mix just till dough is smooth and form ball.
  5. Shape into 2 (2 inch diameter) rolls.
  6. With sharp, thin serrated knife, using a sawing motion, slice 3/16 inch thick cookies.
  7. Place 1 inch apart on ungreased cookie sheet and bake at 375 degrees for 10 min till golden at edges.
  8. Let cold.
  9. Heat chocolate morsels in double boiler.
  10. Spread half the cookies with jam and top each with plain cookie.
  11. Spread with a circle of melted chocolate.
  12. Sprinkle with minced almonds.
  13. Yields: 3 dozen.
