Stewed Collard Greens

  1. Cook the bacon in a large saucepan over medium-high heat for 5 minutes, or until crisp.
  2. Add the onion and cook for 5 minutes more, or until the onion is tender.
  3. Add 2 cups of water and simmer for 10 minutes.
  4. Add the collards and simmer for about 20 minutes, or until very soft.
  5. Season with the salt and Tabasco and serve.
