Curried Mango Pork Tenderloin
- 1 pork tenderloin; trimmed
- 1 bottle H1 sauce
- 1 small jar mango chutney or preserves
- 1 tbsp red curry powder
- 2 tsp ground coriander seed
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 salt and pepper
- 1 olive oil; as needed
- Marinate tenderloin with half the H1 sauce for 4-48 hours.
- Pat tenderloin dry.
- Toss with enough oil to cover the tenderloin.
- Season.
- Heat H1 sauce and mango chutney until blended in a saute pan.
- Add tenderloin to pan.
- Roast at 350 for approximately 30 minutes or until pork reaches desired doneness.
- Turn over pork and baste halfway through cooking time.
