Potato Casserole
- 1 lb ground beef
- 1 large onion, sliced (or more if you like)
- 12 teaspoon salt
- 3 -4 large potatoes
- 12 cup water
- 1 (16 ounce) can peas
- salt
- pepper
- Peel and slice potato into thin slices.
- Place in the bottom of a medium size baking pan.
- Lightly salt potato.
- In a large pan brown ground beef, stirring frequently and breaking it up and skimming off excess fat.
- Season with salt and pepper if desired.
- Once done, sprinkle meat over potatoes.
- Add onion to pan and saute until tender crisp.
- Spread over potato mixture.
- Gently toss potato mixture a couple of times, not much, just to mix slightly.
- Poor liquid from peas and 1/2 cup water onto meat and potato mixture.
- Cover loosely with a piece of aluminium foil (allow a little moisture to escape).
- Bake at 350'F for 40 minutes.
- Remove foil, sprinkle peas across the top of meat and potato mixture.
- Test the seasoning and add more if desired.
- Bake uncovered for another 15 minutes or until potato is very tender.
- Serve hot.
