Sweet Potatoe Soup
- 2 medium sweet potatoe, peeled and chopped
- 1 medium yellow or white onion, chopped in big pieces
- 3 large carrots, chopped
- 1 cup penuts, raw and unsalted
- 1 pinch salt
- 1 tbsp grapeseed oil
- 4 cup water, less or more depending on how smooth you want it
- Preheat oven at 400.
- Place the vegetables in a cooking sheet and drizzle oil
- Roast the veggues in the oven at 400' until they are soft.
- Place half of the veggies in a blender with 2 cups of water and a pinch of salt.
- Repeat until all veggies are blend.
- Garnish with green onions and cherry tomatoes, or cilantro, etc.
