Foolproof Shredded Omelet for Chirashi Sushi
- 4 Eggs
- 1 tbsp Sugar
- 2 tsp Katakuriko
- 2 tbsp Water
- Dissolve the katakuriko in the water.
- Break the egg into a bowl.
- Add the sugar and the katakuriko slurry from Step 1 and mix well.
- (If you use a whisk to beat it without letting it foam, it will turn out very smooth.)
- Strain the mixture for a smoother result.
- It's also fine without straining.
- Coat a frying pan with oil and pour in 1/4 of the mixture from Step 2, and cook.
- Insert long chopsticks underneath the omelet and flip it over to cook the other side.
- Repeat with the remaining egg mixture.
- Once cool, cut into desired sizes.
