Yogurt-Blue Cheese Dip
- 1/2 c. lowfat Greek yogurt
- 1 tbsp. fresh lemon juice
- 1/4 tsp. Tabasco sauce (optional)
- kosher salt
- Pepper
- 1 scallion
- 1 tbsp. chopped fresh flat-leaf parsley
- 2 oz. blue cheese
- Cucumbers
- radishes
- potato chips
- In a bowl, whisk together the yogurt, lemon juice, Tabasco (if using), and 1/4 teaspoon each salt and pepper.
- Stir in the scallion and parsley, then the blue cheese.
- Serve with radishes, cucumbers, and potato chips.
