Mincemeat Refrigerator Cookies Recipe
- 1 1/2 c. butter
- 2 c. sugar
- 2 Large eggs
- 1 c. brandied mincemeat
- 5 c. pre-sifted all-purpose flour
- 1 teaspoon each: salt, soda, nutmeg, cinnamon
- 1/2 teaspoon cloves
- 1 c. walnuts, finely minced
- Walnut halves
- Glaced fruits
- Cream together butter and sugar till light and fluffy.
- Add in Large eggs and beat well.
- Stir in mincemeat.
- Sift together flour, salt, soda and spices.
- Add in gradually to first mix, stirring well after each addition.
- Add in walnuts.
- Shape dough into 2 rolls about 2 inches in diameter.
- Wrap in waxed paper.
- Refrigeratetill hard.
- Slice about 1/4 inch thick with thin sharp knife.
- Decorate with glace fruits or possibly walnuts.
- Place on ungreased baking sheets.
- Bake in preheated oven at 375 degrees for 15 to 20 min.
