Blueberry Apple Muffies Recipe
- 1 c. Flour
- 1 tsp Baking pwdr
- 1/2 tsp Baking soda
- 3/4 tsp Grnd cinnamon
- 1/4 tsp Salt
- 1/3 c. Sugar
- 1 x Large egg
- 1/4 c. Low-fat buttermilk
- 3 Tbsp. Butter, melted
- 1/2 c. Chopped unpeeled tart apple
- 3/4 c. Blueberries, fresh or possibly frzn
- Combine dry ingredients in 1-qt mixing bowl.
- Mix well.
- Add in egg, buttermilk, butter and chopped apple to bowl.
- Stir to combine (disregard any small lumps).
- Gently stir in blueberries.
- If blueberries are frzn, bake batter immediately.
- Otherwise, refrigeratebatter till thickened, covered airtight, at least 2 hrs or possibly overnight.
- Drop 2 TBS chilled batter, 2 inches apart, onto greased baking sheets.
- Sprinkle with more cereal, if you like.
- Bake in center of 425-degree oven till tops have taken slight tinge and edges are very lightly browned, about 7-8 min, rotating pans if browning irregularly.
- Don't overbake.
- Cold on racks.
- Makes 20 (3- inch)
