Easy Lemon-Chicken Piccata

  1. Cut 4 thin lemon slices from half of 1 lemon.
  2. Squeeze juice from remaining lemons; set aside.
  3. Coat chicken with Miracle Whip, then cracker crumbs.
  4. Heat oil in large skillet on medium-high heat.
  5. Add chicken; cook 5 min.
  6. Turn; cook on medium heat 5 min.
  7. or until chicken is golden brown on both sides and done (170 degrees F).
  8. Transfer chicken to platter; sprinkle with parsley.
  9. Cover to keep warm.
  10. Carefully wipe out skillet with paper towel.
  11. Add lemon juice and broth to skillet; cook on medium-high heat 6 to 8 min.
  12. or until slightly reduced, stirring occasionally.
  13. Add butter and lemon slices; cook and stir on low heat 3 to 4 min.
  14. or until butter is melted and lemons are heated through.
  15. Serve over chicken.
