Turkey Meatloaf with Spinach and Sun-Dried Tomatoes

  1. Preheat oven to 375 degrees F and grease a 9x5 loaf pan with nonstick cooking spray.
  2. Heat olive oil in a medium skillet and add chopped onions and sun-dried tomatoes.
  3. Cook until onions are translucent, then add chicken broth and Worcestershire sauce.
  4. Once it is heated through, remove from heat and set aside.
  5. In a large bowl, combine ground turkey, spinach, bread crumbs, 4 tablespoons (1/4 cup) Parmesan cheese, egg, milk, and spices.
  6. Add in the onion and tomato mixture and mix just until combined.
  7. Press evenly into the loaf pan and sprinkle remaining bread crumbs and Parmesan on top.
  8. Bake for 45-55 minutes, or until cooked through.
  9. Let sit for 5 minutes before serving.
  10. Great as leftovers too!
