Easy Spinach and Mushroom Egg Bake

  1. Heat oven to 350 degrees F.
  2. Heat oil in large saucepan on medium heat.
  3. Add onions; cook 5 min.
  4. or until crisp-tender, stirring frequently.
  5. Add mushrooms; cook 5 to 7 min.
  6. or until golden brown, stirring occasionally.
  7. Add half the spinach, cooking after each addition 2 to 3 min.
  8. or just until wilted.
  9. Repeat with remaining spinach.
  10. Remove from heat.
  11. Whisk eggs, milk and cheese until blended.
  12. Add to spinach mixture; mix well.
  13. Spread dry stuffing mix onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with spinach mixture.
  14. Bake 30 to 35 min.
  15. or until center is set and top is golden brown.
