Thai Style Chicken
- 1 tablespoon oil
- 1 onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 1 clove garlic, crushed
- 2 tablespoons Thai green curry paste
- 4 chicken thigh fillets, cut into even sized pieces Whole Foods 1 lb For $3.99 thru 02/09
- 1 yellow capsicum, thinly sliced
- 1/2 head broccoli, cut into florets
- 2 cups coconut milk
- 1/2 cup vegetable or chicken stock
- 1/4 cup KRAFT Smooth Peanut Butter
- coriander, to garnish
- cooked white rice, to serve
- Heat oil in a pan and cook onion, garlic and curry paste until onion is soft.
- Add chicken in small amounts, and cook until golden brown.
- Add vegetables and stir-fry until just tender.
- Stir in coconut milk, stock and peanut butter.
- Reduce to a low heat and simmer until chicken is tender.
- Garnish with coriander and enjoy with boiled white rice.
