Thai Style Chicken

  1. Heat oil in a pan and cook onion, garlic and curry paste until onion is soft.
  2. Add chicken in small amounts, and cook until golden brown.
  3. Add vegetables and stir-fry until just tender.
  4. Stir in coconut milk, stock and peanut butter.
  5. Reduce to a low heat and simmer until chicken is tender.
  6. Garnish with coriander and enjoy with boiled white rice.
