Mexican Scrambled Eggs.
- 8 eggs
- 1 lb chorizo sausage
- 10 ounces green chilies
- salt and pepper
- 1 cup cheddar cheese
- salsa
- sour cream
- guacamole (optional)
- Cook chorizo in large skillet.
- When it is cooked pour eggs and season to taste.
- Make like a large omellet.
- Once side one is done flip in sections and place green chillis and cheese on.
- Cover it to let the cheese melt.
- Serve with salsa, sour cream and gucamole to taste.
- Yummy.
- Note: You can add bell peppers, mushrooms, olives, and onions to taste.
