Simple Pepper Steak

  1. Cut beef across grain in 1/8" strips.
  2. In a separate bowl, combine soy sauce, garlic and ginger.
  3. Add beef; toss to coat.
  4. Heat oil in a large skillet; add beef.
  5. Cook, stirring constantly, over high heat until browned.
  6. Check for doneness.
  7. If still tough, cover and simmer 10 to 20 minutes over low heat.
  8. Increase heat and add vegetables.
  9. Cook, stirring until vegetables are tender crisp.
  10. Add cornstarch and water; stir until thickened.
  11. Add tomatoes and heat through.
  12. Serve over rice or egg noodles.
