Beef And Noodle Soup A La Vietnamese Recipe

  1. Combine beef, garlic, ginger, cinnamon and 2 qts water.
  2. Bring to a boil, skim off scum.
  3. Reduce heat to low and simmer gently till meat is tender, about 45 min.
  4. Continue skimming and keeping level of liquid constant by replenishing with fresh water.
  5. Meanwhile, rinse and chop the cilantro.
  6. When meat is tender, remove garlic, cinnamon and ginger.
  7. Add in noodles and simmer till tender, about 5 min.
  8. Remove soup from heat, stir in salt, lime juice, bean sprouts, pepper and cilantro.
  9. Adjust seasoning and serve piping warm.
  10. Yield: 4 servings
