Apple Cranberry Tuna Melt
- 1 can (5 Oz. Size) White Tuna, In Water No Salt Added, Drained
- 3/4 cups Nonfat Greek Yogurt
- 1 Tablespoon Dijon Mustard
- 2 Tablespoons Sweet Relish
- 1/2 teaspoons Sea Salt
- 1 teaspoon Pepper
- 1/2 cups Celery, Chopped
- 1/2 cups Apple, Chopped
- 1/4 cups Red Onion, Diced
- 1/4 cups Dried Cranberries
- 4 whole Whole Wheat English Muffins, Toasted
- 4 slices Muenster Cheese, Or Any Cheese Of Your Liking
- 1 cup Baby Spinach
- Turn broiler to high heat.
- In a mixing bowl add tuna, yogurt, mustard, relish, salt and pepper.
- Taste and adjust yogurt and seasonings to your liking.
- Add in celery, apples, onions, and cranberries.
- Stir well, and make sure the mixture is moist enough.
- Add more yogurt or condiments if preferred.
- On a baking sheet lay down the bottom half of each English muffin.
- Top each with 1/2 cup tuna mixture, and top with a good slice of cheese.
- If you want the top of your English muffins toasted you can put them on the sheet as well.
- Broil for 3-5 minutes until cheese is melted and bubbly.
- Remove from oven, top with spinach and remaining top of English muffin.
- Enjoy with a crisp dill pickle and pop chips!
