Herbed Red Potato Salad Recipe
- 2 lbs. sm. red potatoes
- 1/4 c. red onion, finely minced
- 1/4 c. fresh parsley, finely minced
- 1/4 c. fresh chives, finely minced
- 1 tbsp. dill, finely minced
- Low-cal lowfat sour cream dressing
- Boil potatoes in water in large saucepan till tender.
- Drain.
- Dice potatoes and place in large bowl.
- Add in onions, parsley, chives and dill.
- Pour dressing over and gently toss to combine.
- Refrigerateseveral hrs.
