Flavorful Herbed Chicken
- 3 -3 12 lbs whole chickens, cut up
- 2 tablespoons dried sage
- 2 tablespoons dried rosemary
- 2 tablespoons dried thyme
- 1 tablespoon salt
- 3 cups white wine
- 1 cup lemon juice
- Preheat oven to 375 degrees.
- Mix spices and salt in a bowl.
- Wash chicken.
- Peel back chicken skin and insert generous portion of spice mixture between skin and chicken and rub on chicken.
- Use all of the spice mixture.
- Place chicken, top side down into two 9x13 inch baking dishes.
- Pour white wine and juice over chicken.
- Cover and bake for 40 minutes.
- Flip each chicken piece over.
- Bake, uncovered, for 35-45 minutes.
- Recommended: Serve with mashed potatoes and use sauce in pan as gravy.
