Chicken & Wild Rice Casserole
- 4 whole Chicken Breasts, Cooked And Chopped
- 1/2 pounds Sausage, Browned And Drained
- 1 box (6 Oz. Box) Wild Rice, Cooked According To Directions
- 1/2 whole Onion, finely chopped
- 1/2 whole Green Pepper, Finely Chopped
- 2 Tablespoons Butter
- 1 can (8 Oz. Can) Mushrooms, Drained (optional)
- 2 cans (10.5 Oz. Can) Cream Of Mushroom Soup (can Be Low Fat)
- Cook and chop chicken breasts.
- Brown and drain sausage.
- Cook rice according to package directions.
- Saute onions and green pepper in butter until tender.
- Mix all of the above with mushrooms and cream of mushroom soup until well combined.
- Place in a 9x13 pan.
- Bake at 350 degrees for about 20 minutes until heated through.
- I bake mine covered to keep it from getting hard and crunchy.
