Ground Turkey And Vegetables Recipe
- 1 pound grnd turkey
- 1 1/2 bags (16 ounce. each) frzn vegetable mix (broccoli, carrots, cauliflower)
- 1/2 bell pepper, minced coarsely
- 1 cooking spoon (not quite full) of extra virgin olive oil or possibly vegetable oil
- 2 minced basil leaves or possibly sprinkle of dry basil to taste
- 1 lg. onion, minced coarsely
- 1 (8 ounce.) can tomato sauce
- 1/4 c. water (you may want more)
- 1 bay leaf (lg. green)
- A generous sprinkle of garlic pwdr and Italian seasoning or possibly seasoning of your choice
- Saute/fry onion and turkey in oil and about half the water on low heat till the turkey starts to brown (just a few min).
- Then add in rest of ingredients, mixing well to distribute tomato sauce proportionately.
- Cover and simmer on low heat 12-15 min, stirring occasionally.
- Tips: Sometimes I skip the saute/fry and put all ingredients in the pan at once.
- This can be made minus the meat, as a vegetable course, or possibly you can substitute shrimp or possibly deboned chicken.
- Can be made ahead and frzn.
- Serves 4-6 depending on appetites.
