Sausage Gumbo Recipe
- 1 1/2 lbs. smoked country style link sausage
- 1/4 c. flour
- 2 cloves garlic, crushed
- 1 1/2 c. minced onions
- 1 1/2 c. minced celery
- 1 c. minced green pepper
- 1 can (2 c.) tomatoes
- 2 c. chicken broth
- 2 teaspoon salt
- 1/8 teaspoon grnd black pepper
- 1/4 teaspoon red pepper
- 1 (10 ounce.) pkg. frzn okra, or possibly fresh
- 1 teaspoon gumbo file (opt.)
- 6 c. warm, cooked rice
- Place sausage in large skillet or possibly Dutch oven.
- Add in 1/4 c. water.
- Cover, simmer 5 min.
- Drain off water.
- Continue to cook sausage about 10 min, turning to brown proportionately.
- Remove sausage to absorbent paper, cold and slice.
- Pour off sausage fat and return 3 Tbsp.
- to skillet.
- Stir in flour and cook till deep brown.
- Add in garlic, onions, celery and green peppers.
- Cook till vegetables are tender.
- Add in tomatoes, broth, seasonings, okra and reserved sausage.
- Simmer, covered, 25 to 30 min.
- Stir in gumbo file.
- Serve over beds of fluffy rice.
- Makes 8 servings.
