Sausage Gumbo Recipe

  1. Place sausage in large skillet or possibly Dutch oven.
  2. Add in 1/4 c. water.
  3. Cover, simmer 5 min.
  4. Drain off water.
  5. Continue to cook sausage about 10 min, turning to brown proportionately.
  6. Remove sausage to absorbent paper, cold and slice.
  7. Pour off sausage fat and return 3 Tbsp.
  8. to skillet.
  9. Stir in flour and cook till deep brown.
  10. Add in garlic, onions, celery and green peppers.
  11. Cook till vegetables are tender.
  12. Add in tomatoes, broth, seasonings, okra and reserved sausage.
  13. Simmer, covered, 25 to 30 min.
  14. Stir in gumbo file.
  15. Serve over beds of fluffy rice.
  16. Makes 8 servings.
