Baked Possum Recipe

  1. Mix the beer, whiskey, salt, Tabasco sauce, and Worcestershire sauce together.
  2. Place possum in a large roasting pan.
  3. Sprinkle the celery, onions, and the garlic all over the possum.
  4. Pour the liquid mix over the possum as well.
  5. Cover and chill overnight.
  6. Preheat oven to 350 degrees.
  7. Place the sweet potatoes around the possum.
  8. Bake covered for 1 1/2 hrs.
  9. Baste once or possibly twice with the marinade from the pan as the possum cooks.
