Chicken And Sausage Gumbo
- 2 whole chicken breasts, skinned and boned
- 8 oz. cooked, smoked sausage, cut into 1/2-inch slices
- 3 Tbsp. vegetable oil
- 3 Tbsp. all-purpose flour
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1/2 c. chopped celery
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper
- 1/4 tsp. black pepper
- 1 (16 oz.) can stewed tomatoes, crushed
- 1 (13 3/4 oz.) can chicken broth
- 8 oz. okra, cut into 1/2-inch slices or 1 (10 oz.) pkg. frozen cut okra
- 3 c. cooked rice
- Cut

- 1-inch
- chunks.
- In large saucepot, heat oil
- over
- medium-high heat.
- Add chicken and sausage, a few pieces

- time, and cook until browned on all sides, removing to plate as they brown.
