Ruby Fruit Compote Recipe
- 1 can (16 ounce.) Thank You Dark Pitted sweet cherries
- 1/3 c. sugar
- 1 tbsp. cornstarch
- Dash of salt
- 1 teaspoon lemon juice
- 1 pkg. (10 ounce.) frzn unsweetened strawberries
- 1 pkg. (10 ounce.) frzn red raspberries
- Whipped cream
- Drain cherries, reserving syrup.
- Add in sufficient water to syrup to measure 1 c..
- Blend sugar, cornstarch and salt in saucepan, add in reserved syrup.
- Cook and stir till thick and bubbly.
- Add in lemon juice.
- Stir in cherries and strawberries and raspberries.
- Refrigeratethoroughly.
- Spoon into sherbet glasses.
- Top with dollop of whipped cream or possibly lowfat sour cream.
- Serves 4.
