Ginger Beef Rice
- 1 Tbsp. oil
- 1 beef sirloin steak (1 lb.), cut into strips Whole Foods 1 lb For $7.99 thru 02/09
- 1 medium onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. chopped fresh gingerroot or 2 tsp. dried ground ginger
- 1 can (10 fl oz/284 mL) condensed beef broth
- 2 cups broccoli florets
- 1 cup shredded carrots
- 2 oranges, peeled, sectioned, seeds removed Safeway 1 lb For $0.79 thru 02/09
- 1-1/2 cups instant white rice, uncooked
- Cook and stir beef in oil, in large non-stick frying pan, on high heat for 2 minutes.
- Stir in onion and ginger; cook and stir an additional minute.
- Add beef broth; bring to a boil.
- Stir in broccoli, carrots, oranges and rice; cover.
- Let stand 5 minutes.
- Stir and serve.
