Black Beans Brownie/Cake
- 1 (15 ounce) can black beans (rinsed and drained)
- 3 eggs (reduce to 2 if you want a more dense fudge consistency)
- 3 tablespoons oil
- 4 tablespoons cocoa powder
- 12 teaspoon salt
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 1 teaspoon vanilla
- 34 cup sugar
- 14 cup whey protein powder (optional)
- 2 tablespoons Greek yogurt
- 14 cup mini chocolate chip (optional)
- Preheat oven to 350 degrees F.
- Grease 9x9 pan.
- Place all ingredients in blender except chocolate chips until completely pureed.
- Pour into greased pan.
- (It's OK, the batter is thin).
- Sprinkle chocolate chips over top.
- Bake at 350 F for about 30 minutes.
- Toothpick inserted in center comes out clean.
- Cool completely before cutting with plastic knife.
