skye's sausage gravy

  1. in a non-stick skillet on medium heat... fry your ground sausage with your spices until browned and fully cooked.
  2. drain grease all but about 2 tablespoons.
  3. sprinkle the flour over the sausage... stirring constantly so that it doesn't stick ... until absorbed and you can smell a lovely "nutty" scent.
  4. slowly stir in your milk... turn down the heat to low and allow to simmer with a lid on for a few minutes.
  5. if your gravy is too thick.
  6. .. thin it with a little more milk or water... adding only a tablespoon or so at a time.
  7. if it is too thin... just add a little bit of flour only a teaspoon at a time.
  8. .. stirring well in between each addition giving it time to be absorbed.
  9. serve over biscuits, cornbread, or even noodles.
