skye's sausage gravy
- 1 lb ground sausage (pork, turkey or chicken... regular or breakfast style. I like a mild or breakfast pork sausage)
- 2 tsp nutmeg
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 pinch red pepper flakes
- 1 salt & pepper to taste
- 2 tbsp flour (I like "wonder" gravy flour... it is a very fine flour and blends quickly)
- 1 1/2 cup milk (whole or 2% work best)
- in a non-stick skillet on medium heat... fry your ground sausage with your spices until browned and fully cooked.
- drain grease all but about 2 tablespoons.
- sprinkle the flour over the sausage... stirring constantly so that it doesn't stick ... until absorbed and you can smell a lovely "nutty" scent.
- slowly stir in your milk... turn down the heat to low and allow to simmer with a lid on for a few minutes.
- if your gravy is too thick.
- .. thin it with a little more milk or water... adding only a tablespoon or so at a time.
- if it is too thin... just add a little bit of flour only a teaspoon at a time.
- .. stirring well in between each addition giving it time to be absorbed.
- serve over biscuits, cornbread, or even noodles.
