Jalapeno-Popper Grilled Cheese

  1. On each of 4 slices of bread, spread 1 tablespoon of the goat cheese.
  2. Spread preserves over goat cheese, dividing evenly.
  3. Add 2 oounces Jack cheese to each, then 2 slices bacon.
  4. Top each with another slice of bread.
  5. Spread 1 1/2 teaspoon of the butter on 1 side of each sandwich.
  6. Press with a spatula.
  7. Heat a large nonstick skillet over medium-low heat.
  8. Place 2 sandwiches, butter side down, in skillet.
  9. Cook 3 to 4 minutes, until golden brown.
  10. While first side is cooking, spread 1 1/2 teaspoon of the butter on other side of each sandwich.
  11. Turn sandwiches and cook 3 to 4 minutes, until second side is crispy and golden brown and cheese has melted.
  12. Repeat with remaining 2 sandwiches.
