Hearty Cabbage Soup Recipe
- 1 pound lean grnd beef
- 1 to 2 lg. onions, minced
- 2 cloves garlic, chopped
- 1/2 c. diced celery
- 1 green pepper, minced
- 2 tbsp. oil
- 1 (28 ounce.) can tomatoes or possibly 2 lbs. fresh or possibly 2 c. frzn tomatoes
- 2 (5 1/2 ounce.) cans tomato paste
- 2 c. raw, diced potatoes
- 2 c. diced carrots
- 4 c. beef stock
- Salt and pepper to taste
- Paprika
- 6 to 7 c. coarsely minced cabbage
- Saute/fry beef, onions, garlic, celery and pepper in oil.
- Add in remaining ingredients except cabbage.
- Simmer for 1 hour.
- Add in cabbage.
- Simmer for 1 hour more, adding more water - up to 3 c. if necessary.
- Yield: 6 to 8 servings.
