Lighter Reuben Sandwich
- 1 lb sauerkraut
- 1 cup beer
- 14 cup spicy brown mustard
- 8 slices rye bread
- 4 teaspoons spicy brown mustard
- 8 slices deli corned beef
- 8 slices deli ham
- 4 slices low-fat swiss cheese
- 4 teaspoons Smart Balance butter spread
- In a medium skillet combine sauerkraut, beer, and mustard.
- Bring to boil, then reduce heat to med.
- and simmer until liquid is absorbed, about 10 minutes.
- Spray an indoor grill or waffle maker wth cooking spray.
- Assemble sandwich.
- Lay out 4 slices of bread top each with mustard, sauerkraut, 2 slices corned beef, 2 slices ham, and 1 slice cheese.
- Top each sandwich with remaining slices of bread.
- spread 1 tsp butter on top and bottom of each sandwich.
- Cook on grill till lightly browned and cheese melts.
