Vickys Chicken & Bacon Casserole, Gluten, Dairy, Egg & Soy-Free
- 1 tbsp oil
- 450 grams chicken, cubed
- 1 onion, chopped
- 4 slice back bacon, chopped
- 100 grams white mushrooms, sliced
- 1 clove garlic, finely chopped
- 280 ml chicken gravy - I use instant here such as Bisto brand (it's free from) gravy granules , 4 heaped tsps made up with boiling water
- Preheat the oven to gas 5 / 190C / 375F
- Heat the oil in a casserole dish on the stove top and brown off the chicken cubes
- Add in the onions, bacon, mushrooms & garlic and continue to fry off for 5 minutes
- Pour the gravy over, put the lid on the casserole dish and put in the oven for 40 minutes
- Serve with potatoes and seasonal vegetables
