Mushroom and Smoked Mozzarella Pizza (White or Red)

  1. Clean the mushrooms and remove any tough stems (especially on shiitakes).
  2. Slice and steam in a small skillet, covered, until done to your liking.
  3. Drain off the liquid and set aside.
  4. Preheat the oven to 425F.
  5. Place the crust on a pan, spread the sauce or ricotta cheese evenly over it, and sprinkle with the mushrooms, mozzarella, and scallions.
  6. Bake until the cheese is bubbly, 8 to 10 minutes.
  7. Remove from the oven, let stand for 2 to 3 minutes, and cut into 6 or 8 wedges to serve.
