Green Chile Mini Burgers

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Combine sour cream, 1 tablespoon green chiles and 1/4 teaspoon hot pepper sauce in bowl.
  3. Cover; refrigerate until serving time.
  4. Combine remaining chopped green chiles, ground beef, onion, hot pepper sauce, salt and pepper in bowl.
  5. Shape into 8 small patties.
  6. Place patties onto grill.
  7. Grill, turning once, 8-10 minutes or until internal temperature reaches at least 160F and meat is no longer pink in center.
  8. Top each burger with 2 pieces cheese; let melt slightly.
  9. Spread 2 teaspoons sour cream mixture onto bottom half of each bun.
  10. Top each with 1 burger, 1 slice tomato, 2 arugula leaves and top half of bun.
