Chinese BBQ Chicken Wings

  1. Mix dry rub ingredients and set aside.
  2. Pat the chicken wings as dry as possible.
  3. Then "season well" with the rub.
  4. Cover with plastic wrap and refrigerate 4 to 24 hours.
  5. Mix ingredients for BBQ sauce and refrigerate until needed.
  6. Set up your grill for Indirect Heat with a drip pan in the middle (add water).
  7. Place on the grill over the drip pan and cook at 350F for 45 minutes.
  8. After 45 minutes glaze the wings with the be BBQ sauce.
  9. cook for additional 5 minutes, just until the sauce is nice and sticky.
  10. Glaze with sauce again.
  11. Continue cooking for another 5 minutes.
  12. Glaze with BBQ sauce 2 more times.
  13. (cooking about 5 minutes each time after adding the glaze).
  14. Let rest 5 to 10 minutes before serving..
  15. You can cook in the oven at 350F for 30 minutes.
  16. Then reduce heat to 300F and glazed with bbq sauce and cook for 5 minutes.
  17. Glaze and cook for 5 minutes again.
  18. Then glaze for the third time and cook an additional 5 minutes.
