Chip Meringue Crust Recipe
- 2 c. finely crushed potato chips
- 1 teaspoon baking pwdr
- 3/4 c. finely minced nuts
- 2 egg whites
- 1/4 teaspoon vanilla
- 1/2 c. sugar
- Combine chips, baking pwdr, and nuts.
- Beat egg whites till foamy.
- Add in vanilla and 1 Tbsp.
- sugar to egg whites, beat till stiff.
- Add in remaining sugar by Tbsp., beating well after each addition.
- Carefully mix in potato chip mix.
- Spread proportionately over side and bottom of greased 9 inch pan about 1/2 inch higher than pan rim.
- Bake at 350 degrees till crust is lightly browned.
- Fill with pudding mix of your choice.
