Aromatic Tomato Sauce Recipe

  1. Heat 3 Tbsp.
  2. butter in a large saucepan.
  3. Add in onion, carrot, and celery- saut6 gently till softened, but not browned, about 10 min.
  4. Stir in tomato paste, then tomatoes and juice and wine.
  5. Simmer, partially covered, and stir frequently, till thickened to sauce consistency, about 45 min.
  6. Puree by passing through a food mill.
  7. Return to simmer-, season to taste with salt and pepper, before serving, stir in remaining butter.
  8. Makes 2 1/2 c..
