Timeless Roasted Potatoes

  1. Preheat oven to 450.
  2. Peel potatoes.
  3. Cut into one- to two-inch pieces.
  4. Boil in salted water for fifteen minutes.
  5. Pour oil (at least 1/4- 1/2-inch) in pan and add herbs.
  6. Roast potatoes for 20-30 minutes.
  7. Reduce heat to 350 and roast 45-75 minutes until very crisp and golden.
