Hilton Head Herring Salad
- 1 herring fillet, salt
- 1 cup beet, cooked, diced
- 1 cup carrot, cooked, diced
- 1 cup potato, cooked, diced
- 1 cup apple, diced
- 12 cup cucumber, diced
- 1 tomatoes, cut in small pieces
- 2 onions, small, diced
- 6 lettuce leaves, large
- 1 cup sour cream
- 14 cup vinegar
- 14 cup juice, beet, for coloring to your liking
- Soak salt herring in cold water in partially freshen.
- Remove skin and bone and cut into bits.
- Do not cook.
- Add beets.
- carrots, potatoes, apple, cucumber, tomato, and onion to herring.
- Toss gently.
- Place lettuce in a large plate or on individual salad plates.
- Prepare a dressing by combining sour cream, vinegar and beet juice.
- Place dressing in individual serving dishes; do not mix with salad.
