Grilled Pork Chops and Ratatouille

  1. Heat the grill to medium-high.
  2. Season the pork with 1/2 teaspoon each salt and pepper.
  3. Brush the peppers, zucchini, and eggplant with the oil.
  4. Grill the pork until just cooked through, 5 to 7 minutes per side.
  5. Grill the vegetables until just tender, 3 to 4 minutes per side.
  6. Cut the grilled vegetables into 1 1/2-inch pieces and place in a large bowl.
  7. Add the pesto, 1/4 teaspoon salt, and 1/2 teaspoon pepper and toss to coat.
  8. Serve the pork with the ratatouille and additional pesto, if desired.
