Beet salad

  1. Cut beets into chunks or slices
  2. pour half the vinegar and half the olive oil over top
  3. season with salt
  4. cover & let marinade 1hr at room temp
  5. combine yogurt, rest of vinegar and oil, garlic & pinch of salt in bowl
  6. mix
  7. pour sauce over beet slices & stir
  8. chill in fridge 1hr
  9. add walnuts just before serving
