Beet salad
- 1 1/2 lb Beets
- 3 tbsp Red wine vinegar
- 3 tbsp Olive oil
- 1 Salt
- 1 cup Greek yogurt
- 1/3 cup Walnuts, coarsely chopped
- 2 3 garlic cloves, minced
- Cut beets into chunks or slices
- pour half the vinegar and half the olive oil over top
- season with salt
- cover & let marinade 1hr at room temp
- combine yogurt, rest of vinegar and oil, garlic & pinch of salt in bowl
- mix
- pour sauce over beet slices & stir
- chill in fridge 1hr
- add walnuts just before serving
