Indian Chicken Curry
- 1 tablespoon oil
- 750 g chicken thigh fillets, cubed
- 1 onion, chopped
- 1 garlic clove, crushed
- 1 tablespoon curry powder
- 2 teaspoons sweet paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 12 teaspoon ground cloves
- 1 tablespoon cornflour
- 375 ml lite evaporated milk
- 12 cup water
- salt
- Heat oil in a pan, brown chicken, remove from pan.
- Add onion and garlic to pan, cook for 2 minutes Add combined spices and cook stirring for 1 minute.
- Add combined remaining ingredients and bring slowly to the boil, stirring, return chicken to pan, reduce heat and simmer for 10 mins approximately.
- Serve over rice.
