Strawberry Mousse

  1. In medium saucepan, whisk together apple juice, honey, cornstarch and salt.
  2. Bring to a simmer, whisking often.
  3. Reduce heat and simmer, until thickened.
  4. Remove from heat and let cook 10 minutes.
  5. In food processor combine apple juice mixture, strawberries and tofu; puree until creamy and smooth.
  6. Divide mousse among ramekins.
  7. Cover and refrigerate for at least 4 hours.
