Ragin' Rho's Creole Shrimp N' Sausage

  1. Cook rice according to package directions.
  2. While rice cooks, sprinkle the shrimp with Cajun seasoning; toss to coat.
  3. Remove skin from 2 links of hot italian turkey sausage.
  4. Heat 1 tablespoon oil in a large nonstick skillet or wok over medium-high heat and brown the sausage in small chunks.
  5. Add shrimp to pan; saute 4 minutes or until done.
  6. Remove sausage and shrimp from pan; keep warm.
  7. Heat 1 tablespoon oil in pan over medium-high heat.
  8. Add garlic; saute 30 seconds.
  9. Add all vegetables and thyme.
  10. Saute 4 minutes or until tender.
  11. Stir in cooked rice, shrimp, sausage, tomatoes, salt and pepper, and add chicken broth to desired sauce consistency.
  12. Cook 1 minute or until thoroughly heated.
  13. Enjoy!
