Orange Basil Cookies
- 13 cup butter
- 9 ounces cream cheese
- 1 each eggs yolk
- 1 tablespoon oranges juice
- 18 ounces cake mix, orange
- 1 teaspoon oranges zest, grated
- 1 cup raisins, seedless
- 1/2 cup walnuts chopped
- 2 tablespoons basil dried
- Mix together the butter, cream cheese, egg yolk and orange juice.
- Add dry cake mix; stir in orange zest, raisins, walnuts and basil.
- Chill dough.
- Preheat oven to 350F (180C); butter cookie sheets.
- Roll chilled dough into 1/2-inch balls and place on cookie sheets.
- Flatten each ball with a fork.
- Bake for 10 to 15 minutes.
- For a bit of artistry, attach a small paper or silk leaf using a dab of confectioner's sugar icing.
- Makes 6 to 7 dozen.
- Variation: Lemon cake mix and 1 tablespoon frozen orange juice concentrate can be substituted for the orange cake mix and orange juice.
