Artichoke Rice Salad With Dressing Recipe
- 2 jar (6 ounce) marinated Artichoke bottoms
- 1 bot (4 ounce) stuffed Green olives
- 5 x Green onions
- 1/2 x Green pepper, sliced
- 1 pkt Rice pilaf mix Or possibly Chicken rice mix
- 1/3 c. Mayonnaise
- 1/2 tsp Curry pwdr
- 2 jar marinade from Artichoke bottoms
- Cook rice according to package directions; let cold.
- Drain artichoke bottoms, reserving liquid.
- Drain olives; throw away their liquid.
- Chop artichoke bottoms, olives, onions, and pepper.
- Add in to cooled rice and mix.
- Make the dressing by combining marinade from artichokes with other dressing ingredients.
- Toss with rice salad.
- Chill 1 hour.
- Serve when ready.
