Artichoke Rice Salad With Dressing Recipe

  1. Cook rice according to package directions; let cold.
  2. Drain artichoke bottoms, reserving liquid.
  3. Drain olives; throw away their liquid.
  4. Chop artichoke bottoms, olives, onions, and pepper.
  5. Add in to cooled rice and mix.
  6. Make the dressing by combining marinade from artichokes with other dressing ingredients.
  7. Toss with rice salad.
  8. Chill 1 hour.
  9. Serve when ready.
