Blueberry Cornmeal Muffins Recipe
- 1 c. flour
- 2/3 c. yellow cornmeal
- 1/3 c. sugar
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 lrg Large eggs
- 1 c. lowfat sour cream
- 1/4 c. salad oil
- 1 c. blueberries fresh, frzn or possibly canned & liquid removed
- Preheat oven to 400F, prepare pans.
- Combine flour, cornmeal, sugar, baking pwdr, soda & salt.
- Beat Large eggs with lowfat sour cream till blended, beat in oil.
- Add in dry mix to wet mix till just combined adding blueberries with the last few stirs.
- Spoon batter into pans & bake for 18-20 mins or possibly till lightly browned.
- Makes 12.
- 189 calories per muffin.
