Spicy Chicken With Coconut
- 1 12 lbs chicken pieces
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 6 tablespoons butter (I use canola oil)
- 1 large onion, chopped
- 1 teaspoon crushed red pepper flakes
- 12 teaspoon thyme leaves
- 1 bay leaf
- 14 cup lemon juice
- 14 cup honey
- 2 cups coconut milk
- 1 cup unsweetened coconut
- Sprinkle the chicken pieces with salt, pepper and paprika.
- Heat oil or butter in large skillet and fry the onion with the chicken to brown.
- Add the remaining ingredients.
- Cover and reduce heat and simmer for 30 minutes.
- (if not using breasts it's more like 45 minutes).
- Serve with rice.
